Department of Homeland Security's Immigration Statistics: both datasets and reports are available on a variety of immigration topics.

Mexican Migration Project: a joint research project between Princeton University and the University of Guadalajara on Mexican immigration. Data sets include socioeconomic and migratory data. Data are available in STATA, SAS or SPSS formats.

National Agricultural Workers Survey: by the Department of Labor, this site includes datasets as well as reports on topics such as the demographics of agricultural workers, migration, housing, earnings and benefits.
